1 cup farro
3 cups water or broth
Rinse and drain the farro. Place the farro in a pot and add enough water or broth to cover (about 3 cups will be plenty). Bring to a boil and then reduce the heat, cover the pot, and simmer for about 30 minutes. When the farro is to your liking (try a few kernels), drain off excess water.
Note: Farro is a nutritious stand-in for rice or porridge, added to soups, stews, and curries, or chilled and mixed with veggies and salad dressing for a tasty, hearty salad.
