2 lbs. fresh spinach
3 eggs, slightly beaten
1 cup milk
1 tsp. salt
¼ tsp. pepper
2 tsp. vinegar
1 tsp. grated onion
Preheat the oven to 350°.
Cook the spinach in a small amount of boiling water for 3 minutes. Drain well and then chop fine.
In a mixing bowl, combine the spinach and remaining ingredients. Pour the mixture into 8 individual custard cups that have been buttered or greased.
Set the custard cups (the actual number will vary depending on the size of your cups) in a large casserole dish and place in the oven. Pour boiling water into the casserole dish so the custard cups have water about a third to half-way up their sides. Bake for 25 to 30 minutes or until set.
These are good alone, or you can serve them with a cheese sauce poured over them.
