Crustless Bacon and Ham Quiche

5 slices bacon, fried and crumbled (reserve fat)

1 cup cooked ham, diced

1 cup Swiss cheese, cubed

1 cup half-and-half

3 eggs, lightly beaten

1 T. cold butter, finely diced

½ cup flour

¼ tsp. salt

¼ tsp. nutmeg

⅛ tsp. pepper

1 small bottle cap club soda (about 1 T.)

Coat a quiche dish with a small amount of the reserved bacon fat (discard remainder).

Combine all ingredients and mix well. Pour into the prepared quiche dish. Let set at room temperature for 1 hour.

Bake in a preheated 500° oven for 15 minutes. Reduce temperature to 350° and bake 10 minutes longer or until top is golden brown.

Cut into wedges or squares and serve. Also good at room temperature.
