1 cup dried soybeans (soaked overnight in water to cover by 2 inches)
2 T. diced salt pork or bacon
1 cup celery, sliced
2 T. green onions, chopped
1 T. green bell or other sweet pepper
3 T. flour
1 cup milk
½ tsp. salt
¼ cup wheat germ
Rinse the soaked soybeans and place in a large pot and drain; cover with fresh water and bring to a boil. Simmer soybeans for 1½ to 2 hours, adding boiling water if needed to keep them covered. Drain and set aside.
Preheat the oven to 350°.
Brown the salt pork or bacon in a frying pan. Add celery, green onions, and green pepper and cook for 5 minutes. Stir in the flour and then slowly add the milk, stirring constantly. Add the salt, and, while continuing to stir constantly, bring the mixture to a low boil.
Stir in the cooked soybeans and pour the mixture into a lightly buttered casserole dish. Sprinkle the wheat germ over the top and bake for 30 to 40 minutes.
Serves 4 to 6.
