Chicken, Lentil, and Barley Stew
4 cups chicken broth
½ cup lentils
½ cup pearled barley
1 cup cooked chicken, cubed
½ cup carrots, peeled and diced
½ cup celery, diced
¼ cup onion, diced
Salt, pepper, and parsley to taste
Pour the broth into a pot and add the lentils and barley; simmer, covered, for 1 hour.
Add the remaining ingredients and simmer for at least another 30 minutes or until the barley, lentils, and vegetables are tender. Add more broth or water if the stew begins looking too dry.
Serves 4 to 6.
