1 bunch broccoli
4 T. oil
2 cloves garlic, peeled
1 to 2 T. red pepper flakes (or crushed red pepper)
Salt and pepper to taste
Remove stalks from broccoli and cut the remainder into 1½-inch pieces.
Heat the oil in a large skillet and add the garlic cloves. Stir and cook on medium heat for about 2 minutes. Remove garlic and discard it.
Add broccoli and red pepper flakes. Stir and then cover and cook over low heat until the broccoli is bright green and crisp tender (about 5 minutes), adding a tablespoon or two of water if necessary so broccoli doesn’t burn. Stir occasionally.
Serves 4.
