Pineapple Mint Green Smoothie

If you’re new to eating greens (no judgment here—I didn’t like them until I was well into my thirties)—this is a great starter smoothie. It’s sweet and refreshing, and it doesn’t have an overly “green” flavor. You can thank the pineapple and mint for making that happen. If you’re a smoothie pro and greens are your thing, just add another cup of spinach or go wild with some more kale or chard.

1 packed cup greens such as spinach or kale

1 cup unsweetened coconut water, plus more if needed

1 cup pineapple chunks, frozen

5–6 mint leaves

1 lime

Place the greens and coconut water in a high-speed blender and blend until the liquid turns green and smooth. This might take a couple minutes, depending on the power of your blender. Add the pineapple and mint, and blend until smooth. Add more coconut water if you need to. Squeeze in half of the lime, taste, and add the other half if you want it. Pour the smoothie into a glass and drink up.

KITCHEN NOTES: This definitely has more of a juice consistency than a traditional smoothie consistency. Because of that, it might separate as it sits. If it does, just give it a stir, and you’re back in business.
