Island Eats Food Truck Chicken Sandwich
Ingredients:
One 12” hoagie roll or similar bread roll
1/2 lb. leftover roasted or BBQ’d chicken meat, de-boned, de-skinned, and shredded
2 tablespoons chicken stock/broth
1 red onion, thinly sliced
12 slices pickled jalapeno
1 cup shredded lettuce (about 1/4 to 1/2 small iceberg head)
Aioli:
1/2 cup mayo
3 cloves garlic, crushed
1/2 teaspoon cayenne
1/2 teaspoon five-spice powder
1/2 teaspoon ground allspice
1/2 teaspoon ground pepper
1/2 teaspoon dried thyme, crumbled
1/2 teaspoon grated nutmeg
1 tablespoon soy sauce
Squeeze of lime
Directions:
Combine all the aioli ingredients together in a bowl and thoroughly mix together. Set aside and allow flavors to come together for 15 minutes or so if possible.
Gently heat the shredded chicken and chicken stock in a microwave for 30 seconds on high; mix thoroughly when heated.
Slice hoagie roll along the side, leaving one side attached; open the roll and scoop out the bulk of the bread, leaving a “dugout” in the roll.
Generously spread the aioli on both halves of the roll. I mean, generously.
Add sliced onions and sliced jalapenos to both halves of the bread.
Add all the chicken with some of the stock (to keep it very moist) to the bottom half of the roll.
Put four dollops of aioli on the chicken spaced equally along its length.
Cover the meat with shredded lettuce.
Bring the two sides together and slice in half, leaving two six-inch halves.
