Lemony Lemon Bars

Crust

You’ll Need

2 cups all-purpose flour

1 cup powdered sugar, plus more for dusting

Pinch of salt

1 cup (2 sticks) butter, room temperature

Directions

1 Preheat oven to 350˚ Fahrenheit. Lightly grease a 9” × 13” baking pan and set aside.

2 Combine flour, powdered sugar, and salt in a large bowl.

3 Using a fork, mix in butter until mixture appears crumbly. Press mixture into pan with spatula and bake for 20 minutes.

Filling

You’ll Need

4 eggs

2 cups white granulated sugar

6 tablespoons all-purpose flour

6 tablespoons fresh lemon juice

¼ teaspoon of grated lemon peel (zest)

Directions

1 Combine eggs, sugar, flour, lemon juice, and grated lemon zest in medium-sized bowl.

2 Pour filling into baked pie crust and bake 25 minutes.

3 Remove from oven and lightly sprinkle powdered sugar over filling. Let cool 1 hour before serving.
