You’ll Need
1 cup all-purpose whole-wheat flour
½ cup old-fashioned oats
½ cup pure maple syrup
¼ cup butter, melted
½ teaspoon vanilla extract
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground ginger
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup grated carrots
½ cup raisins
½ cup flaked coconut
½ cup chopped walnuts
Directions
1 Preheat oven to 325˚ Fahrenheit.
2 Combine all ingredients in a large bowl. Mix well until batter is blended evenly.
3 Use a tablespoon to portion cookies on greased baking sheet, approximately 1 – 2 inches apart.
4 Bake cookies for 18 minutes or until cooked through.
5 Remove cookies from baking sheet and allow to cool on a wire rack.
