Spinach Balls

You’ll Need

1¾ cup bread crumbs, recipe below

1 pound frozen, chopped spinach, thawed

5 eggs

1 large onion

½ cup butter, melted

¾ cup parmesan cheese

2 cloves garlic, minced

½ teaspoon dried thyme

½ teaspoon cayenne pepper

Directions

1 Preheat oven to 350˚ Fahrenheit.

2 Press fully thawed spinach into colander to remove excess water.

3 Mix with remaining ingredients by hand in large bowl.

4 Form mixture into 1-inch balls and place on baking sheet.

5 Bake 20 to 25 minutes, or until firm. Remove from oven and arrange on tray before serving.

Bread Crumbs

You’ll Need

Bread slices, any variety

Directions

1 If only fresh bread is available, place in 300˚ Fahrenheit oven for 10 to 15 minutes until dry, turning every 5 minutes for even baking.

2 Place dry bread into food processor and pulse until only crumbs are left.
