Zucchini Frittata

You’ll Need

1 tablespoon olive oil

1 Zucchini, cut into thin slices

Salt and pepper to taste

Pinch of garlic powder

4 eggs, beaten

Parmesan cheese, for topping

Directions

1 In a medium-sized frying pan, cook zucchini slices in olive oil over medium heat with a dash of salt, pepper, and garlic powder.

2 Flip slices with tongs and cook until zucchini looks clear.

4 Whisk eggs in separate bowl; then pour over zucchini. Cook on medium heat 5-7 minuites until frittata is set around the edge.

4 Cover, reduce heat to medium–low, and cook additional 5 minutes, or until eggs are firm.

5 Remove pan from heat, keep covered, and let stand 5 more minutes.

6 Remove frittata with a spatula and serve with parmesan cheese.
