Cauliflower in Cheese Sauce

You’ll Need

1 head of cauliflower, cut up

2 tablespoons cornstarch

4 cups milk

1 cup grated parmesan cheese

1 tablespoon butter

Salt to taste

Directions

1 Cut up cauliflower florets and boil in water for 5 to 10 minutes, or until soft. Place cooked cauliflower in a casserole dish.

2 Mix cornstarch into ¼ cup milk. Stir until lumps disappear and a smooth paste forms.

3 Heat remaining milk, butter, and salt in a saucepan on low heat until butter is melted. Add cornstarch paste and whisk continually while bringing sauce to a boil on medium-high heat. Mixture will thicken as it boils.

4 Once sauce is thickened, remove from heat and stir in ½ cup cheese until melted.

5 Pour white sauce over cooked cauliflower and top with remaining cheese. Broil in oven until dish is lightly brown on top.

6 Remove from oven and let cool a few minutes before serving.
