Blueberry Cake with Lemon Sauce
Blueberry Cake
You’ll Need
1½ cups all-purpose flour
½ teaspoon salt
1 tablespoon baking powder
½ cup (1 stick) butter
1 cup white granulated sugar
2 eggs
⅓ cup of milk
1 teaspoon vanilla extract
1½ cups fresh blueberries
Directions
1 Preheat oven to 350˚ Fahrenheit and grease a 9” × 13” baking pan.
2 Mix flour, salt, and baking powder in a medium-sized bowl; set aside.
3 Cream butter and sugar together in a separate bowl. Mix in eggs and beat well to incorporate. Stir in milk and vanilla.
4 Add flour mixture and stir with spatula to combine. Gently fold in blueberries.
5 Spread batter into baking pan and bake 30 minutes.
6 Remove from oven and let cool 1 hour.

Lemon Sauce
You’ll Need
½ cup white granulated sugar
1 tablespoon cornstarch
⅛ teaspoon salt
¼ teaspoon nutmeg
1 cup boiling water
1 tablespoon butter
1 teaspoon grated lemon peel (zest)
Juice of one lemon
Directions
1 Combine sugar, cornstarch, salt, and nutmeg in a large saucepan. Gradually stir in boiling water; then simmer over low heat until thick, stirring occasionally.
2 Remove from heat. Stir in butter, lemon zest, and lemon juice. Serve as a topping with blueberry cake.
