Blood Orange Star Anise Fizz

  1. Soak the blood orange in Grand Marnier for 3 hours. Save about 20 ml (0.7 oz.) of Grand Mardier for later.
  2. Place the oranges and their soaking liquid into the oven at 200 C (400 F) and roast with the star anise for 30 minutes, or until caramelised.
  3. Once ready, remove the star anise and the skin of the orange, and puree the fruit into a food processor.
  4. Mix part of this puree with tequila and Grand Marnier, top with prosecco and serve into cocktail classes.
