Sparkling Party Punch with Fruited Ice Ring

 Makes about 31/2 quarts


Ice Ring

Cooking spray

1 orange, cut into thin rounds

1 lemon, cut into thin rounds

1 lime, cut into thin rounds

12 maraschino cherries

Punch

3 cans (12 ounces each) frozen yellow or pink lemonade concentrate, thawed

4 cups pineapple juice, chilled

2 cups cold water

4 cups ginger ale, chilled


1. For the ice ring: Mist the inside of a 5-cup ring mold with cooking spray. Use a very light touch so that the frozen ring won’t look greasy when unmolded. Arrange the orange, lemon, and lime slices and cherries in the mold. Add enough water to come halfway up the sides of the fruit (about 1 cup). Freeze until the water is solid and then fill the mold to the rim with more cold water. Freeze until firm. When ready to serve, quickly dip the bottom of the mold in hot water. Cover the mold with a large plate, hold them firmly together, and flip over. The ice ring should drop out of the mold.

2. For the punch: In a punch bowl, stir together the lemonade concentrate, pineapple juice, and cold water.

3. Just before serving, add the ginger ale and ice ring. Serve soon, while still bubbly.
