■ Makes 21/2 quarts
1 cup water
1 cup sugar
6 cups freshly brewed ice tea
2 cups peach nectar
1 teaspoon almond extract
2 to 3 ripe peaches, peeled and cut into thin wedges, for garnish
1. In a small saucepan, bring the water and sugar to a boil, stirring until the sugar dissolves. Set aside to cool.
2. Pour the tea, peach nectar, and almond extract into a large serving pitcher. Sweeten to taste with the cooled sugar syrup.
3. Refrigerate until chilled. Serve over ice, garnished with sliced peach wedges.
A Note from Miss Kay
The first step in this recipe is to make a sugar syrup (also called simple syrup). You can do this with any iced tea if you like it sweetened. It just makes dissolving easier. We love our iced tea in Louisiana. This recipe is for special occasions.
