Garden Pea & Radish Salad

 Makes 6 to 8 servings


1 cup mayonnaise

1 tablespoon sugar

1/2 teaspoon mustard powder

1 teaspoon salt, or to taste

1/4 teaspoon black pepper, or to taste

1 bag (20 ounces) frozen baby green peas, thawed

1/2 cup thinly sliced radishes

4 ounces sharp cheddar or mozzarella cheese, cut into small cubes

1 cup cashews


1. In a large bowl, whisk together the mayonnaise, sugar, mustard powder, salt, and pepper. Let sit 5 minutes and then whisk until the sugar dissolves.

2. Add the peas, radishes, and cheese, stirring to coat. Cover and refrigerate until lightly chilled. Just before serving, stir in the cashews and check the seasoning.
