■ Makes 8 to 10 servings
1 box brownie mix (I use Ghirardelli Double Chocolate)
Ingredients listed on brownie mix package for preparing batter
8 ounces cream cheese, at room temperature
1/3 cup sugar
1/2 teaspoon vanilla extract
1 large egg yolk
1. Preheat the oven and prepare the brownie batter according to the package directions. Scrape the batter into a 9-inch square baking pan.
2. In a large bowl, with an electric mixer on medium speed (or by hand with a wooden spoon), combine the cream cheese, sugar, vanilla, and egg yolk until smooth. Spoon big dollops over the brownie batter and use a chopstick or butter knife to pull swirls through the batter.
3. Bake according to package directions. Let cool for at least 15 minutes before serving warm or at room temperature. The cooler they are, the easier they are to cut and remove from the pan.
