Filling
3 pounds baking apples, peeled, cored, and cut into 1-inch-thick wedges
Juice and finely grated zest of 1 large lemon
1/2 cup packed light brown sugar
1/2 teaspoon ground cinnamon
Topping
1 cup all-purpose flour
1 teaspoon baking powder
1 cup packed light brown sugar
1/2 cup rolled oats
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 stick (1/4 pound) butter, cut into small cubes and chilled
1. For the filling: Preheat the oven to 350°F. Butter a 9 x 13-inch baking dish.
2. Place the apple wedges in a large bowl. Sprinkle with the lemon juice and toss. In a small bowl, stir together the lemon zest, brown sugar, and cinnamon. Sprinkle over the apples and toss to coat. Pour into the baking dish.
3. For the topping: In another large bowl, whisk together the flour, baking powder, brown sugar, oats, cinnamon, and nutmeg. Work in the butter with a pastry blender or your fingertips until the mixture is crumbly with a few pieces of the butter the size of green peas. Place in the freezer until the butter is firm, about 10 minutes. Sprinkle evenly over the apple mixture.
4. Bake until the topping is browned and the filling is bubbling, 50 to 60 minutes. Let cool for 30 minutes before serving.
