SPICY BREAKFAST SALAD

Ingredients

Makes 2 small serves

Time 15 minutes

DRESSING

2 tsp grated fresh ginger

2 Tbsp extra virgin olive oil

1 tsp cayenne powder

1 small roasted garlic clove, peeled

2 tsp rice syrup

pinch of sea salt

SALAD

1 small grapefruit

1 orange

1 blood orange

1 handful of coriander (cilantro) leaves

nigella seeds (optional)

Method

To make the dressing, put all the ingredients in a blender and mix until smooth.

To make the salad, cut the ends off the grapefruit, orange and blood orange, then slice off the skin and pith, working with the contours of the fruit. Cut into rounds and put in a bowl. Squeeze the juice from the leftover parts of the fruit into the bowl as well. Add the dressing and sprinkle with coriander and nigella seeds.

TIP Do you want to make this meal completely raw? Use raw garlic and a natural liquid sweetener.
