RADISH AND SAMPHIRE SALAD

Ingredients
Makes 2–3 serves
Time 10 minutes
SALAD
200 g (7 oz) radishes, thinly sliced
100 g (3½ oz) samphire
2 avocados, diced
6 handfuls of fresh parsley, finely chopped
2 handfuls of fresh mint leaves
DRESSING
juice of 2 grapefruit
4 dried dates, pitted and diced
4 Tbsp extra virgin olive oil
sea salt and black pepper
Method
Combine all the ingredients for the salad.
Make a dressing by mixing the grapefruit juice and dates in a blender, then adding the olive oil drop by drop. Keep mixing until you have a beautiful creamy and smooth dressing.
Sprinkle the dressing over the salad. Season to taste with sea salt and some freshly ground black pepper.
