Ingredients

Makes 2 serves

Time 5 minutes plus soaking

2 handfuls of cashew nuts

1 large banana

1 Tbsp matcha green tea powder

Method

Soak the cashew nuts overnight in enough water to cover them. Drain and rinse, then put them in a blender.

Add the banana and matcha powder along with a scant ½ cup (100 ml) of cold water and blend everything into a creamy mixture. Add your favourite seasonal topping to decorate and then serve.
