2 pounds fresh cactus paddles
1 small yellow onion
4 garlic cloves
2 tablespoons butter
1 teaspoon dried oregano
1 cup sour cream
Clean the cactus paddles and pat dry. Cut into 1" pieces. Remove the skin from the onion and cut into 1⁄4" pieces. Remove the skin from the garlic and cut into thin slices.
Melt the butter in a skillet on low heat. Add the cactus pieces, onion, garlic, and oregano; cook, stirring periodically, until the onion is clear.
