Cactus Paddles

Try topping this with a sprinkling of ground pistachio meats.

INGREDIENTS | SERVES 4

2 pounds fresh cactus paddles

1 small yellow onion

4 garlic cloves

2 tablespoons butter

1 teaspoon dried oregano

1 cup sour cream

  1. Clean the cactus paddles and pat dry. Cut into 1" pieces. Remove the skin from the onion and cut into 14" pieces. Remove the skin from the garlic and cut into thin slices.
  2. Melt the butter in a skillet on low heat. Add the cactus pieces, onion, garlic, and oregano; cook, stirring periodically, until the onion is clear.
  3. Drain off excess butter. Stir in the sour cream.
