Orange Liqueur Mousse

Serve as a light dessert after Mexican Pot Roast (see recipe in Chapter 12).

INGREDIENTS | SERVES 4

1 (3-ounce) package orange-

flavored gelatin

1 cup boiling water

14 cup cold water

14 cup orange liqueur

1 cup whipping cream

12 teaspoon ground cinnamon

12 cup shredded coconut

  1. Dissolve the gelatin in the boiling water. Add the cold water and cool the mixture to room temperature. Stir in the orange liqueur. Chill in the refrigerator until the mixture starts to thicken, about 30 minutes.
  2. Whip the cream until it piles softly. Gradually add the gelatin mixture and cinnamon, stirring gently until evenly blended. Pour into a mold. Chill until set, about 1 hour.
  3. Turn the mold onto a serving plate and top with the shredded coconut.

Making It Nonalcoholic

If you want to make uncooked foods calling for liqueur nonalcoholic, simply substitute 1 tablespoon of the flavored extract mixed with half water and half corn syrup. You will get a very similar flavor without the alcohol.
