Christmas Candy Balls

These traditional Christmas treats are a favorite with young children.

INGREDIENTS | MAKES 2 DOZEN

2 medium white potatoes

2 cups pecans

1 cup red candied cherries

1 cup confectioners’ sugar

1 teaspoon ground cinnamon

1 cup granulated sugar

1 teaspoon vanilla extract

  1. Scrub the potatoes but do not peel. Cut into 1" cubes. Chop the pecans into small pieces. Cut the candied cherries in half. Mix the confectioners’ sugar and cinnamon in a small bowl.
  2. Put the potatoes in a medium-sized pot. Add water to cover. Bring to a boil and continue boiling until the potatoes are soft. Drain off the water.
  3. Press the potatoes through a ricer or put through a food mill. Mix in the granulated sugar, vanilla extract, and nuts.
  4. Form balls about the size of marbles. Coat them with the confectioners’ sugar and cinnamon mixture.
  5. Store in the refrigerator until ready to serve. Put into small fluted paper cups and garnish with cherry halves.
