Mango Corn Bread

Serve this as part of a big breakfast for friends or during a family brunch.

INGREDIENTS | SERVES 6

1 tablespoon active dry yeast

14 cup warm water

1 medium white onion

1 mango

1 fresh jalapeño chili pepper

3 cups masa harina or cornmeal

112 cups grated Cheddar cheese

12 cup vegetable oil

1 cup canned cream-style corn

3 tablespoons granulated sugar

13 cup whole milk

13 cup buttermilk

  1. Preheat oven to 425°F.
  2. Dissolve the yeast in the warm water. Peel the onion and chop into 14" pieces. Remove the skin and seed from the mango; cut into 14" pieces. Remove the stem and seeds from the jalapeño and cut into 14" pieces.
  3. Combine all the ingredients in a large mixing bowl. Mix until well blended.
  4. Pour into a greased bread pan and bake for 35 minutes.

About Yeast

Yeast is a live entity that grows when it gets warm. However, if it’s added to boiling water, you can kill it. You can make a heavy, dense bread by leaving out the yeast and substituting baking soda.
