Trout in Paper Wrappers

Ingredients:

4 fillets, trout

Salt, kosher, as desired

1/2 thin-sliced onion, red

1/2 thin-sliced lemon, fresh

4 tsp. of Cajun seasoning mix, sodium-free

Oil, olive

Butter, unsalted
Instructions:
1. Preheat the oven to 375F.
2. Place fillets individually in large squares of baking paper. Season as desired.
3. Arrange lemon and onions on the top. Divide evenly over fillets.
4. Top lemon and onion with Cajun seasoning. Top that with butter pat and a bit of oil.
5. Fold, then crimp baking paper tightly around edges in small-sized folds to make half-moon shapes. Press as you’re crimping and seal packets well. You don’t want steam escaping. Arrange packets on cookie sheet.
6. Bake fish for 13 to 15 minutes, till fish is thoroughly cooked and it flakes easily.
7. Cut packets open. Remove fish to plate. Dress with liquid in bags. Serve.
