Ingredients:

18 scrubbed baking potatoes, medium

1/2 cup of whipping cream, heavy

1/2 cup of butter, unsalted

1 tbsp. of salt, kosher

1 tbsp. of sugar, white

4 cups of flour, all-purpose
Instructions:
1. Peel the potatoes. Place them all in large-sized pot with water to cover + extra. Bring to boil. Allow potatoes to boil till they soften. Drain them and mash them well.
2. In large bowl, combine eight cups of mashed potatoes with cream, butter, sugar and salt. Cover potatoes. Refrigerate them overnight.
3. Mix flour into mashed potatoes. Roll into tennis-ball sized orbs. Keep the dough balls in refrigerator.
4. Remove one ball at a time from refrigerator. Roll them out on floured work surface.
5. Fry lefsa in grill. Place on dish towel after cooking. Fold a towel over them to maintain their warmth. Stack the lefsa in a loose pile. Keep them covered so they don’t dry out until you serve.
