Baked Fish with Macaroni

Ingredients:

2 cups of macaroni

3 tbsp. of butter, unsalted

4 tbsp. of flour, all-purpose

1 & 1/2 cups of milk, 2%

1 cup of grated cheese

1/4 tsp. of ground nutmeg

Salt, kosher, as desired

Pepper, ground, as desired

1 & 1/4 pounds of uncooked cod fillet, de-boned, skinned, cubed

1 cup of green peas, fresh
-
1 cup of breadcrumbs, dried
Instructions:
1. Cook macaroni in large pot of water using package instructions. Drain and rinse with water. Set it aside.
2. Preheat oven to 390F.
3. Melt butter in pot. Once it’s nearly melted, whisk in flour till it forms a paste. Allow paste to cook for one or two minutes. Add milk. Whisk till smooth. Cook for two to three minutes, till it starts to thicken a bit.
4. Place handful of cheese into sauce. Stir well. Allow cheese to melt a little, then stir and add more cheese. Continue working this way till all cheese has melted and has been incorporated well into smooth sauce.
5. Add nutmeg. Season as desired. Set mixture aside. Allow to cool for five minutes.
6. To assemble dish, add macaroni to baking dish. Layer in peas and cod. Pour cheese sauce on top. Sprinkle with breadcrumbs. Lastly, bake for about 25 to 30 minutes, till top is golden brown. Serve.
