Rice & Date Pudding

Cooking + Prep Time:
45 minutes + 3 hours chilling time
Ingredients:

1/2 cup of water, cold

2 tbsp. of rice, uncooked

1 cup of whipping cream

20 pitted, chopped dates

1/2 cup of sugar, powdered

1 x 1/4-oz. envelope of gelatin, unflavored

1/4 cup of water, filtered
-
1/2 tsp. of vanilla extract, pure
Instructions:
1. In medium pan, bring the water to boil. Add rice. Stir. Reduce the heat and cover pan. Simmer for 15-20 minutes. When rice is cooked, drain off excess water, if any, then spread on plate and allow to cool.
2. Whip cream till stiff. Add and stir in cooled rice, dates & confectioner’s sugar. Then sprinkle gelatin over water surface. Set over pot of boiling, filtered water till it dissolves. Stir this into the rice mixture. Add vanilla.
3. Place bowl in refrigerator. Chill till mixture starts thickening. Once rice doesn’t settle to bottom anymore, rinse a mold, moistening inside. Pour rice mixture in. Chill till it sets, three hours or so. Remove from mold. Serve when cold.
