Cranberry, Apricot & Clementine Relish

Makes 10 side-dish servings

4 cups (1 lb.) fresh cranberries

1 jar (10 oz.) all-fruit apricot spread

1⁄3 cup golden raisins

1⁄3 cup sugar

2 clementines

  1. To food processor, add cranberries, apricot spread, raisins, and sugar.
  2. Grate 1 teaspoon zest from clementines and reserve.
  3. Peel clementines and separate into sections; add to food processor.
  4. Pulse mixture until relish is finely chopped.
  5. Stir in reserved clementine zest. Cover and refrigerate up to 1 week ahead.
