Broccoli with Garlic & Lemon

Makes 12 side-dish servings

3 bags (12 oz. each) broccoli florets

3 Tbsp. olive oil

3 garlic cloves, thinly sliced

1 tsp. grated fresh lemon peel

Salt and pepper

  1. In wide-bottomed 6-quart covered saucepot on high, heat 3/4 inch water to boiling. Place steamer basket in saucepot; add half of the broccoli florets. Reduce heat to medium; cover and cook 10 minutes, or until broccoli is just fork-tender. Transfer cooked broccoli to large serving bowl. Repeat with remaining broccoli.
  2. Meanwhile, in small skillet on medium, heat oil 1 minute. Add garlic, and cook about 5 minutes, or until garlic just begins to turn golden. Remove skillet from heat. Toss broccoli with lemon peel, 1/2 teaspoon salt, 1/4 teaspoon freshly ground black pepper, and oil-garlic mixture until coated.
