Warm Sweet & Sour Orange Beets

Makes 12 side-dish servings

1 1/2 lb. medium red beets without tops, rinsed

1 1/2 lb. medium golden beets without tops, rinsed

3/4 cup sugar

2 Tbsp. cornstarch

Kosher salt

1 cup orange juice

2/3 cup malt vinegar

1 1/2 tsp. grated orange zest

2 Tbsp. unsalted butter

2 Tbsp. honey

  1. Preheat oven to 400°F. Wrap red and golden beets separately in foil packets. Roast 1 hour, or until tender. Cool and peel beets; cut into 1/2-inch dice.
  2. In large deep skillet, mix together sugar, cornstarch, and 1 teaspoon kosher salt; stir in orange juice and vinegar until cornstarch is dissolved. Bring mixture to boiling; reduce heat to low and simmer 5 minutes, stirring frequently, or until mixture is thick and translucent.
  3. Stir in beets, orange zest, butter, and honey. Continue to simmer about 2 minutes, or until beets are glossy.
