Fresh Green Bean Casserole

Makes 8 side-dish servings

2 lb. green beans

1 Tbsp. olive oil

6 garlic cloves, finely chopped

2 cups fresh breadcrumbs (made from 5 slices country bread)

2 Tbsp. melted butter

Salt and pepper

  1. Preheat oven to 400°F. Fill large bowl halfway with ice water, and set aside. Bring large stockpot with water to boiling. Add green beans and cook about 5 minutes, or until tender but still crisp. Immediately transfer beans to ice-water bath to cool. Strain and blot dry.
  2. In medium skillet on medium, heat oil. Add garlic and cook until soft. Remove from heat, toss in breadcrumbs, butter, 1 teaspoon salt, 1 teaspoon freshly ground black pepper, and blanched beans.
  3. Transfer mixture to 6-cup baking dish. Bake 18 to 20 minutes, or until beans are tender and breadcrumbs are golden. Serve hot, warm, or at room temperature.
