MAKES 400g
1 lemon
1 x 400g tin chickpeas
1 small garlic clove
2 tbsp tahini
¾ tsp salt, plus more to taste
4 tbsp water
2 tbsp olive oil
10g fresh coriander
black pepper, to taste
Food processor
Cut the lemon in half and squeeze the juice into the food processor, catching any pips with your other hand | Drain and rinse the chickpeas | Peel the garlic
In a food processor, blitz the chickpeas, garlic, tahini, salt, water and olive oil | Remove the blade
Pick the leaves from the coriander and discard the stems | Stir the leaves into the hummus
Taste and season to perfection with salt and pepper, transfer to a bowl and serve immediately
