MAKES ABOUT 200g
100g golden caster sugar
35ml water
150g unsalted peanuts
a large pinch of coarse sea salt
a pinch of ground cinnamon
Large heavy-based skillet or frying pan on a medium heat | Line a baking sheet with parchment paper
Pour the sugar and water into the pan | Cook for a few minutes, stirring frequently, until the liquid seizes, and the sugar crystallises | Lower the heat and quickly stir in the peanuts | Continue to cook until the nuts are golden, stirring constantly and scraping up any syrup collecting in the bottom of the pan to coat the peanuts | Just before they’re cooked, sprinkle over the salt and cinnamon and stir them in | Tip the peanuts on to the lined baking sheet and leave to cool completely, then break up any clumps and serve
