MAKES ABOUT 300g
150g cashews
500ml full-fat coconut milk
4 tbsp icing sugar
2 tsp vanilla extract or paste
Medium saucepan | Liquidiser
Place the cashews in the saucepan with 400ml of the coconut milk | Place the pan over a medium heat, bring to the boil and simmer for 15–20 minutes, until most of the coconut milk has evaporated | Transfer to the liquidiser with the rest of the ingredients and blend until smooth | Chill completely before using
