lemon drumsticks with broccoli + sweet potatoes

8 chicken drumsticks

3 medium sweet potatoes, peeled and diced

1 tbsp olive oil

1 lemon, halved

½ tsp kosher salt

¼ tsp freshly ground black pepper

2 tsp dried seasoning blend (such as Greek or Italian seasoning)

2 cups broccoli florets

1. Preheat the oven to 450°F. Line a sheet pan with aluminum foil and parchment paper.

2. Arrange the drumsticks on one side of the sheet pan and the sweet potatoes on the other. Squeeze one lemon half over the chicken and sweet potatoes followed by a drizzle of olive oil. Sprinkle with salt, pepper, and seasoning blend, and lightly toss so both the chicken and sweet potatoes are evenly coated with seasoning.

3. Place in the oven and cook for 25 minutes. Remove the pan from the oven and add the broccoli on top of the sweet potatoes. Return to the oven and cook for an additional 10 minutes. Remove from the oven and squeeze the remaining lemon half over the top.
