Can I use bone-in short ribs instead of boneless?

Yes, but you will need to buy around 3 pounds to account for the bone, and you’ll need to remove the bones to cut the meat up. The bones are packed with flavor, so add them to the pot with the broth and discard them with the bay leaves.

Can I use another cut of meat?

You can substitute 1 pound boneless beef chuck-eye roast, trimmed and cut into ½-inch pieces, in place of the boneless beef short ribs. The cooking time will remain the same.

Do I need to alter the recipe for a 6-quart electric pressure cooker?

Yes, turn the cooker off immediately after the pressurized cooking time and let the pressure release naturally for 15 minutes; do not let the cooker switch to the warm setting.
