TEST KITCHEN TIP: CUTTING PORK BUTT FOR STEW
Pork butt is made up of several different muscles held together with fat and sinew. When cutting it into pieces for stew meat, you will need to use your hands as well as a sharp knife.
1. Pull roast apart at major seams (delineated by lines of fat and silverskin), using sharp knife if necessary.
2. Trim off excess fat and silverskin, then cut meat into 1-inch chunks.
