TEST KITCHEN TIP: PREPPING PORCINI FOR THE PRESSURE COOKER


Dried porcini mushrooms are an easy way to add deep mushroom flavor to a dish. Typically we rehydrate them in hot water prior to cooking, but there’s no need for this with the pressure cooker, which does a great job of softening their texture and concentrating their flavor even without the soaking step.

Place dried porcini mushrooms in fine-mesh strainer and run under water to remove any grit, using fingers as needed to rub grit out of crevices. Then chop and add to pressure cooker pot.
