Mixed nuts and Seeds
THIS IS IDEAL FOR THAT EXTRA CRUNCH AND NUTTY FLAVOUR. USE TO GARNISH RAW SALADS, DIPS, RICE AND SOME DESSERTS.

PANTRY/LARDER
85g raw cashews
85g peanuts
1 tablespoon sunflower seeds
1½ teaspoons sesame seeds
1. Preheat the oven to 160°C/315°F/Gas 2–3.
2. Place the cashews and peanuts on a baking tray and roast in the oven for 3–4 minutes, then add the seeds. Keep tossing and roast for a further 1–2 minutes.
3. Cool completely, then coarsely crush using a rolling pin or a mortar and pestle. This can be stored for approximately 2 weeks in an airtight container.
NOTE: Keep a close eye while roasting – once they go brown, they can burn very quickly.
