Spiced Yoghurt

THIS MARINADE IS DELICIOUS RUBBED INTO A PIECE OF CHICKEN, BEEF OR LAMB. STIR INTO MIXED VEGETABLES AND ROAST – THE MARINADE CREATES ITS OWN DRESSING. ANY LEFTOVERS CAN BE THINLY SLICED AND ENJOYED AS PART OF A SALAD OR FILLED IN ANY BREAD OF YOUR CHOICE.

SERVES 4
PREPARATION TIME: 20 MINUTES

FRESH

500g natural yoghurt

2 garlic cloves, finely crushed

2.5cm piece ginger, peeled and finely grated

SPICES

1 tablespoon garam masala

¼ teaspoon ground turmeric

PANTRY/LARDER

3 tablespoons oil

salt and coarse black pepper to taste

1. Stir all the marinade ingredients together and season with salt and pepper.

2. Pour the marinade into a sterilised jar with a tight-fitting lid, refrigerate and use within 1–2 days.

NOTE: During cooking, baste the meat a couple of times with melted ghee.
