Makes 4 to 6 servings
1 lb. redskin potatoes, sliced 1/8-inch thick
2 T. olive oil
1/2 t. salt, divided
Rinse potato slices in a colander under very cold water; pat dry. Toss with oil and 1/4 teaspoon salt; spread in a single layer on a lightly greased baking sheet. Bake on top oven rack at 500 degrees for 20 to 25 minutes, until golden. Sprinkle with remaining salt; serve warm.
Group a selection of appetizers on a small table separate from the main serving tables…early-comers can nibble while the rest of the crowd gathers.
