Makes 12 to 15
1 c. sugar
1 c. creamy peanut butter
1 egg
Blend ingredients together; let stand for 5 minutes. Scoop dough with a small ice cream scoop; place 2 inches apart on ungreased baking sheets. Use the tines of a fork to make a criss-cross pattern on top of each cookie. Bake at 350 degrees for 10 to 12 minutes. Let cool on baking sheets for 5 minutes; remove to wire rack to finish cooling.
Keep cookies moist! Place one slice of bread into a cookie jar or the storage bag and your treats will stay soft.
