Chocolate-Oatmeal Loaf

This spongy, chocolatey, and flavorful recipe uses ground flaxseed and soymilk to hold the mixture together. You can buy flaxseed whole and grind it yourself or buy it ground and refrigerate it once opened to prevent it from losing its heart-healthy benefits. Cacao powder, pure maple syrup, and almond butter give this loaf a nutty, chocolaty taste with a subtle hint of sweetness.
Nonstick avocado oil cooking spray
2 tablespoons ground flaxseed
5 tablespoons unsweetened organic soymilk
1¼ cups rolled oats
1 teaspoon baking powder
2 tablespoons unsweetened cacao powder
1 teaspoon cinnamon
1 tablespoon pure maple syrup
1 banana, mashed
2 tablespoons unsalted raw almond butter
1 . Preheat the oven to 400°F. Spray a standard (8½-by-4½-by-2½-inch) loaf pan with cooking spray or grease it with 1 teaspoon of oil spread equally on the sides. Place the pan in the oven.
2 . In a small mixing bowl, mix the flaxseed and soymilk and let the mixture sit for 5 minutes, until it congeals.
3 . In a large mixing bowl, combine the oats, baking powder, cacao powder, and cinnamon and mix well. In a small mixing bowl, combine the maple syrup, banana, almond butter, and flaxseed mixture and mix well. Add the dry ingredients into the wet ingredients until well combined.
4 . Carefully take the loaf pan out of the oven and pour the mixture into it. Bake for 20 minutes, or until a fork inserted into the middle of the loaf comes out clean. This loaf is best served warm. Store in the refrigerator covered for up to 1 week. To rewarm, heat in the microwave in 15-second increments until warm.
FLAVOR TIP: Break apart ¼ of a bar of 85 percent dark chocolate and spread evenly on top of the loaf before you bake. It makes for a delicious breakfast oozing with chocolate.
