This delicious salad is made with a crunchy red cabbage base paired with tart, crisp Granny Smith apple slices. It is dressed with apple cider vinegar and a touch of honey to bring it all together. When choosing an apple cider vinegar, look for one that includes the “mother,” which is the sediment that sits on the bottom of the bottle of unrefined, unpasteurized, unfiltered apple cider vinegar. This includes the acetic and gallic acids that give the vinegar its gut-healthy pre- and probiotic features.
1 tablespoon apple cider vinegar
1 tablespoon extra-virgin olive oil
2 teaspoons honey
½ small cabbage, cut into bite-size pieces (about 4 cups)
1 Granny Smith apple, cut into thin slices
Freshly ground black pepper

In a large mixing bowl, mix together the vinegar, olive oil, and honey.

In the same bowl, add the cabbage and apples and stir to combine. Add the pepper to taste. Serve immediately.
SUBSTITUTION TIP:
For a sweeter taste, swap out the
apple cider vinegar for balsamic vinegar.
