This well-balanced recipe is a true winner with everyone in my family, especially my four-year-old son, Zach! The base is made with creamy white beans, whole wheat flour, eggs, and cheesy nutritional yeast. Once baked for 10 minutes, it turns into a crispy, firm, flavorful, and easy-to-pick-up pizza. Top with a low-sodium tomato sauce, veggies, and your choice of cheese, and then bake for only 5 more minutes—making a quick, easy, and heart-healthy homemade pizza!
1½ cups no-salt-added canned cannellini beans, drained and rinsed
½ cup whole wheat flour
2 whole eggs
1 tablespoon nutritional yeast
4 tablespoons low-sodium tomato sauce
½ cup mushrooms, thinly sliced
½ cup part-skim mozzarella cheese, shredded
2 garlic cloves, minced
1 teaspoon garlic powder

Preheat the oven to 450°F. Line a baking sheet with parchment paper.

In a blender, combine the beans, flour, eggs, and nutritional
yeast. Blend for about 1 minute until well combined and forms a pasty, doughy consistency.

Place the mixture on the prepared baking sheet and spread evenly, about 1-inch thick. The mixture will not be like typical pizza dough; it will be slightly sticky. Use a spatula to spread evenly.

Bake for 10 minutes, until the edges are lightly browned and start to lift off the parchment paper.

Remove the crust from the oven and add the tomato sauce, mushrooms, cheese, garlic, and garlic powder evenly over the pizza. Bake for an additional 5 minutes, until the cheese has melted. Cut into 8 slices and dig in.
FLAVOR TIP:
Add a balsamic glaze on top of the finished pizza for a sweet, but slightly tangy addition. To make the balsamic glaze, simmer ¼ cup of balsamic vinegar with 1 teaspoon of pure maple syrup for about 5 minutes until it is thick and syrupy.
