Cantaloupe has one of the highest beta-carotene concentrations found in fruit—hence its beautiful orange color—and is jam-packed with vitamin C, potassium, and folate. When the balsamic vinegar is cooked down, it turns sweet and gains a syrup-like texture. This dish is best served immediately to ensure its sweetness and glaze-like consistency.
1 cup blackberries, mashed
½ cup balsamic vinegar
½ teaspoon pure maple syrup

In a small pot over medium heat, mix the blackberries, vinegar, and maple syrup well and bring to a boil. Then, turn the heat to low and simmer for 10 to 15 minutes, until the mixture reduces by half and thickens into a glaze.
